Garlic Shrimp and Pea Salad

Salad:

1 10 oz. pkg frozen peas, thawed
1/2 lb. medium (fresh or frozen) raw shrimp, shelled and deveined
4 oz. fresh mushrooms, sliced
1/4 cup Vidalia onion (sweet), sliced
4 oz. China Boy Lo Mein Noodles (break in half)

Noodles:

Boil noodles until tender, 3 to 4 minutes
Do not overcook. Rinse, drain well, chill.

Dressing:

2 large cloves, garlic, minced
6 tbls. teriyaki sauce
2 tbls sesame oil
1/4 cup red wine vinegar

Prepare dressing by combining all dressing items and mix well. Line plate with lettuce leaves, place chilled noodles on lettuce, top with peas, shrimp, mushroom, and onions. Pour dressing over salad. Garnish with shredded carrot, radish or cucumber, if desired.
