Sweet Potatoes

- Oranged Sweet Potatoes
- Company Sweet Potatoes
- Marshmallow Topped Sweet Potatoes
- Spicy Sweet Potato Wedges
- Applesauce Sweet Potatoes
- Sweet Potato Pie #1
- Sweet Potato Pie #2
Oranged Sweet Potatoes:

7 or 8 sweet potatoes
1 1/3 t. orange peel
3/4 C. honey
salt to taste
1/2 C. orange juice
1/2 C. butter
1/4 C. brown sugar

Bake at 450 degrees covered 30 or 40 minutes. Serves 6 to 8.

Company Sweet Potatoes:


4 or 5 sweet potatoes
1/4 C. margarine
1/4 t. cinnamon
2 T. brown sugar
12 dates cutup
9 oz. can crushed pineapple
1 3/4 t. salt
1 egg, beaten
1 1/2 T. honey
8 large or 32 small marshmallows

Mash. Bake at 350 degrees about 30 minutes.

Marshmallow Topped Sweet Potatoes:


2 cans (17 oz. each) sweet potatoes drained, mashed
1/4 C. butter, melted
15 large marshmallows
1/4 C. orange juice or 6 oz. frozen orange juice as is
1/2 t. cinnamon
1/2 t. nutmeg

Heat oven to 350 degrees. Mix all ingredients except marshmallows until well blended in 1 quart casserole dish. Top with marshmallows. Bake 20 minutes or until marshmallows are lightly browned. Makes 6 servings.

Spicy Sweet Potato Wedges:


Heat oven 475 degrees. Cut 3 large (2 lbs.) scrubbed sweet potatoes into 1/2" wide wedges. Toss with 1 Tbs. oil, 1 t. sugar, 1 tsp. chili powder, and 1/4 t. salt. Spread on greased baking sheet. Roast 15 to 20 minutes shaking once during cooking. Drizzle with 2 T. maple syrup mixed with 1 t. cider vinegar. 4 servings.

Applesauce Sweet Potatoes:

2 1/2 C. cooked or canned sweet potatoes, drained
1/2 C. uncooked, quick rolled oats
1 C. applesauce
1/2 t. cinnamon
1/2 t. salt
1/3 C. brown sugar
2 T. melted butter

Put sweet potatoes in baking pan. Put applesauce and salt on potatoes. Mix rest, put on potatoes. Bake 375 degrees for 45 minutes. 6 servings.

Sweet Potato Pie #1:


6 to 8 medium yams or 1 1/2 C. canned sweet potatoes
1 1/2 C. evaporated milk
8 T. brown sugar
1/2 t. ginger
1 t. cinnamon
3 eggs, separated
1 t. vanilla
1/2 stick butter
1/2 t. salt
1/2 C. dark corn syrup
1/2 t. nutmeg
9 " baked pastry shell with high rim.

If fresh potatoes are used, boil with jackets on until tender. Peel and mash. Blend all except egg whites and pie shell. Whip until light. Fold in egg whites. Pour into shell. Bake 45 minutes at 375 degrees.

Sweet Potato Pie #2:


2 1/4 lbs. (3-4) sweet potatoes
2 C. sugar
1/2 t. nutmeg
1 can (13 oz.) PET evaporated milk http://www.petmilk.com/
3 (9") PET-Ritz frozen regular pie crust shells or 2 (9") PET-Ritz frozen deep-dish pie crust shells
1/2 C. butter, softened
4 eggs
1/2 t. salt

Cook potatoes in boiling water until fork easily pierces potatoes. Cool slightly. Remove skins. Mix potatoes with electric mixer until smooth. There should be 3 1/2 C. Stir in butter and sugar. Beat in eggs, one at a time. Add nutmeg, salt, and evaporated milk . Pour into unbaked pie crusts. Place pies on cookie sheet. Bake 425 degrees for 20 minutes. Lower heat to 325 degrees. Bake 30 to 45 minutes longer or until knife inserted near center comes out clean. Cool.
