"Sock It To Me" Cake

Serves 8

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon Kosher salt
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
½ cup light brown sugar
2 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ cup chopped pecans
2 tablespoons confectioner's sugar, for dusting

Preheat the oven to 350? F. Generously butter a 9-inch x 6-inch x 4-inch loaf pan.

In a mixing bowl, sift together the flour, baking powder, and salt, and set aside. Place the butter and both types of sugar in the bowl of an electric mixer fitted with a paddle attachment and beat together on low speed for 2 minutes until fluffy. Add the eggs, one at a time, and mix on medium speed for 3 minutes. Add the sour cream, vanilla, and cinnamon, and then mix in the flour mixture in one-third increments, waiting for each addition to be incorporated before adding the next. Scrape down the sides of the bowl with a spatula and fold in the nuts by hand.

Transfer the mixture to the prepared loaf pan and bake in the oven for 1 hour or until a toothpick inserted in the center of the cake comes out clean. Let the cake cool for 15 minutes and then turn it out onto a serving platter. Sprinkle with the confectioner's sugar and serve warm or at room temperature.
