3 cups sweet potatoes
(bake 1 hr. at 375*)
1/4 cup brown sugar
1/2 cup tangerine or orange juice
salt
1/2 stick of butter
1 tsp. vanilla
2 beaten eggs
1/2 cup milk (or omit the milk)
Topping:
1/2 cup brown sugar
1 cup crushed cornflake crumbs
1 cup chopped pecans
1/2 cup self-rising flour
1/3 cup margarine or butter
Cook sweet potatoes and add the next seven ingredients. Mix well until lumps are out (mixer). Spread in a 9 x 11 casserole dish. Combine the next 5 ingredients on top of the sweet potatoes. Bake at 325-350* for 35 min.
